5L+2L Water
1500g Boba Pearls
150g Brown Sugar
150ml Cold Water

 

METHOD

  1. Put 5 liters of hot water in rice cooker.

  2. Turn on the rice cooker to “cook”, bring it to a boil (about 10 minutes)

  3. When water boils, gradually pour in the boba in a circular motion (you don't want the boba to clump together) Boba should be evenly distributed in the rice cooker.

  4. Important - use a spatula to stir gently in a circular motion, keep stirring to prevent sticking at the bottom.

  5. Set a timer for 5 minutes and let boil until the timer is up.

  6. Close the lid but not completely shut. (We DO NOT want to close the rice cooker to prevent overflowing fully).

  7. TIP: use a spatula to stop fully closing the rice cooker (put ladle between lid and pot).

  8. After 5 minutes, add the last 2L of warm/hot water and stir the boba and set the rice cooker to the “Warm” function and close the lid fully. Set another timer for 10 minutes.

  9. After 10 minutes, stir boba and cover again, set a timer for 10 more minutes and let soak.

  10. Once 20 minutes total has passed, after the second timer has passed, stir the boba again and do a taste test. The consistency should be similar to the texture of a gummy bear. No solid texture in the middle, but not too soft so that it’s dissolving.

  11. TIP: If the boba is not yet completely black/dark and transparent or does not have the the right texture, leave boba soaking in the hot water for another 10 minutes and test again.

  12. When the boba has reached the right texture, prepare a pot with ice water deep enough to submerge the strainer with the boba in it.

  13. Drain out the boba with the strainer and a quickly rinse in the ice water for 2 minutes, or until the boba has completely cooled to stop the cooking process.

  14. Put boba into a 1/3 insert and add, 150 grams of brown sugar stir until it dissolves.

  15. Add 150 ml of water and stir well.

  16. Let it soak for 2-10 minutes, until fully cooled.

  17. Date for 2 days and store at room temperature.
